Grilled Figs with Vanilla Scented Ricotta

This is one of my mom’s favorite dishes. It’s a great way to begin a meal, or end one. They’re decadent, flavorful, and are sure to please everyone the next time you light up the grill.

Whatcha Do:
Preheat the grill to medium-high heat. Wash the figs. Slice the tips off and halve the figs. Crumble the brown sugar on the open face of each half of fig. Use your fingers to press the sugar into the fig, some will fall off when you grill it.
Combine the ricotta cheese, honey or agave, and vanilla in a small bowl and mix.
Spray the grill with a canola or olive oil spray. Place the figs on the grill with the rounded side down, leaving the open face with brown sugar up. Grill for 2 minutes. Flip the figs and grill for approximately 3 minutes, or until the brown sugar caramelizes and distinct grill marks appear. Remove from heat.
To assemble, place figs on a plate, rounded side down. Place a dollop of the ricotta mixture on the open face of the fig and top with a mint leaf.
